What is real food?
Joel Salatin defined it for us during the first presentation at the Real Food Summit. And he did a fine job. He knows his stuff and is recognized as the face of sustainable farming. He welcomes anyone at anytime on his farm, Polyface Farms. I can not wait to visit his farm in the very near future and help him out a little while learning about how farming should be done.

I learned a lot while watching all 27 presentations and I will share with you much of it over the next several weeks.
In short, the Real Food Summit has made a significant impact on my life and where I am headed.
My main goal in broad terms is to change the world. More specifically, to spread the truth about health and wellness so human beings like you and I have the opportunity to turn around their own health and begin to feel awesome while accomplishing the impossible.
These folks then become an inspiration to millions of others. It’s an awesome cycle.
To top everything off, we put our loving 9 year old one-eyed Boston Terrier to sleep this past Saturday. He suffered through about 40 seizures since the end of January. Phenobarbital worked for 90 days and then Chauncey had 15 seizures in 20 days in June while still on the pill. He also had dozens of accidents in the house which is obviously not like him.
Based on hours of research, I speculate that Chauncey had brain cancer. In my educated and logical mind, this is caused by a lack of nutrients. Chauncey was fed kibble for his entire life and had he been fed real food I sincerely believe that he would still be alive today and in vibrant health.
This sad event coupled with the Real Food Summit going on at the same time has severely shifted my motivation. Additionally, a presenter discussed a case study on a very young child who suffered through seizures for a couple of years who was healed by being fed animal fats.
Are you ready to learn?
1. Just eat real food
Seriously folks. Before you throw something into your mouth as if it’s a vacuum ask yourself if it’s real. If you are not sure then throw it in the trash and begin to educate yourself.
This is by far the #1 takeaway from the Real Food Summit.
Don’t focus on what you now have to avoid. Instead, focus on nutrient dense food. This includes meat from pasture raised animals, seafood, fish, veggies, fruits, tubers and nuts.
Then tweak from there.
Just eat real food.
2. A low fat diet is not safe for any human being
Do you want to thrive or just survive?
If you want to thrive and strive for optimal health and wellness then you absolutely must consume animal fats. There is no way around this. Animal fats are high in fat soluble vitamins like A, D, E and K2. Animals raised on pasture contain more of these vitamins in comparison to animals raised in a feedlot.
Do you have…
- Mental disorders?
- Digestive problems?
- Fertility issues?
- Erectile dysfunction?
- Poor bowel movements?
- Extra fat that won’t budge?
- Parkinson’s disease?
- Multiple Sclerosis?
- Messed up cholesterol? (high is NOT evil)
- Tooth decay?
Are you at risk for heart disease or cancer?
Do you consume a low fat diet? What about fake foods like low fat or fat free dairy products, reduced fat potato chips, cereal for breakfast, sandwhich for lunch, pasta or pizza for dinner?
If you have any of the general health problems listed above (there are thousands more unfortunately) and eat a low fat diet then you can not go wrong by adding in animal based fats.
A few examples are…
- Butter (great source of Vitamin A)
- Lard (great source of Vitamin D)
- Cod liver oil
- Other high fat dairy products
Eat more fatty meats like ground beef and roasts. If you eat steak then add more fat. Eat fatty fish. Emphasize animals that are raised like they should be. Cows eat grass. Chickens are not vegetarians. Pigs eat anything but need sunlight to provide Vitamin D for us.
I am not suggesting that you gorge on animal fats. Practice mindful eating but quit being afraid of real food that will nourish your body.
A minimum of 50% of my calories come from animal fat (on a MONTHLY basis, not daily). This includes both plant and animal fats but it’s mostly animal. I used to cook a lot of my food in coconut oil but I have been exclusively using grass-fed butter this year.
3. If it makes you feel bad then don’t eat it
If you are eating cereal for breakfast but then feel like shit during the day then why do you continue to eat cereal? Is it because the government says it’s healthy? Why do you listen to the government? Or maybe you read how Oatmeal removes cholesterol which you think is good for your heart.
Why not listen to your own body instead? Why not practice mindful eating and instead only listen to yourself?
I’m waiting for your answer…
You don’t know. Scary, isn’t it?
Temptations. Misinformation. Addiction. It’s not your fault but now that you are reading about the truth you must now take control of your health. You must change. You must experiment. It will take time but you will soon be able to listen to your own body.
You know Taco Bell makes you feel like shit after you eat it. So why do continue to eat it? I personally want to feel awesome and do the impossible. This is why I eat real food.

4. If you have no idea how your food got to your bowl or plate from nature then you should avoid it
I used to love Total and Wheaties cereal. Just a few years ago I used to love Kashi cereal. Right before I discovered the truth about real food. This with ½% milk and a tall glass of orange juice was one of the greatest breakfasts in the world. Or so I thought!
How did the Kashi cereal get to my bowl from the time the grain was picked in nature? I have an idea but the process is so complicated and contains so many steps that I will never know for sure. That pasteurized skim milk went through tons of processing as well. Additionally, it came from cows that are stuffed in factories. The orange juice was also pasteurized and shipped from miles away.
Now let’s think about a breakfast of pastured eggs cooked in butter with onion, mushrooms and peppers.
The eggs were pooped out from hens. Farmers grabbed the eggs, washed them and stored them. The eggs were then brought to the local farmers market where I purchased them. The butter came from whole milk from a cow raised on pasture. It was pasteurized (ok for butter) and a simple process which can be done at home was completed to make butter from the milk. The veggies were picked from a farm and then brought to the local farmers market as well.
Total cereal is crap with added synthetic nutrients. Eggs, veggies and butter contain nutrients as mother nature provided them. This is important because…
5. Nutrients work synergistically
Real food vs isolated nutrients.
Real food every single time.
Real food is made up of multiple vitamins, minerals, enzymes, phytonutrients, antioxidants, fats, proteins, carbohydrates and many other nutrients that we have yet to discover.
Do you honestly believe that taking supplements can replace what mother nature has provided for us in real food?
Not a chance.
This does not mean that supplements can’t help in certain circumstances. This means that you should always look for real food first.
If you are going to supplement, supplement with real food first. Instead of taking a fish oil pill, take fermented cod liver oil which has Vitamins A and D in the perfect ratio. Instead of taking a probiotic, begin fermenting your veggies and other foods. Instead of taking isolated calcium, eat more raw, full fat dairy products from pastured cows or eat salmon with skin and bones.
Nutrients work together with other nutrients to perform their jobs. Calcium in isolated form is not only poorly bioavailable but it needs it’s best friend magnesium to be properly deposited throughout the body.
Potassium and sodium work together too. It’s not healthy to avoid sodium. It’s healthy to avoid all the processed foods that contain refined salt. BIG difference!

6. Some folks benefit from eating more processed foods for a short period of time
If your digestive system is severely messed up and your metabolism is chronically low then yes, you may improve your health by eating processed, refined foods that are easy to digest and assimilate.
Matt Stone is the one who is an expert on this subject. Go visit his blog, 180 Degree Health to learn more. It’s some crazy stuff but this method has helped many folks.
However, he does recommend whole, real foods for optimal health.
Some people turn around their health on the beer and pizza diet.
You just never know which is why experimentation is so important. However, these crazy recommendations are short term only. If you want optimal health then it is absolutely vital to focus on real food that includes animal fats. Supplementation is great short term to regain your health but in the end, real food will always win.

7. Animal fats are made up of mostly unsaturated fat
We have been told to avoid animal fats because saturated fat and cholesterol lead to heart disease.
Not so fast my dear friend!
Did you know that all animal fats are mostly unsaturated? Yes, it’s true. People are so fond of how amazing olive oil is. And it is. If it’s real. It is full of monounsaturated fat.
Animal fat is mostly monounsaturated too. It also has polyunsaturated fatty acids.
Oh, and there are multiple types of saturated fatty acids. Did you know this? You see, it’s not all the same. There are short chain saturated fatty acids as well as medium chain and long chain. Different foods are made up of different ratios of these fatty acids.
The food industry likes to keep this a secret.
Which leads me into…
8. The food industry wants your money and does not give a shit about your health
Companies within the corrupted food industry want their stock to skyrocket. They want you to become addicted to their food so you buy more. They want to make their food as cheap as possible. They want to be able to slap health claims (like how Oatmeal removes cholesterol which is NOT good) on their products.
They want your money and don’t care if your health suffers.
The individuals within the company probably don’t like to see our health suffer because it does not help their own health.
But in the grand scheme of things, they need to keep their job. They need to make money in order to provide food for their family. The people in marketing will do whatever they can to market the companies products even if they know it’s damaging the health of human beings. They do this so they can get more raises at a faster pace.
I don’t blame the individual.
I blame us.
We need to work together to flip the switch.
If we don’t then we are in DEEP trouble as a species.
It’s a bloody mess but myself along with millions of others are on a mission to change the world.

And even though animal fat is mostly unsaturated it doesn’t really matter. Why?
9. There is no evidence that saturated fat leads to heart disease and there never will be.
It’s impossible to prove that saturated fat leads to heart disease. Why? Because saturated fat always comes with other fats as well as other nutrients.
No single thing leads to disease. It’s an entire list of things…
- Too much stress
- Exercising too hard
- Eating processed foods day after day
- Avoiding animal fats
- Skimping on sleep
- Becoming addicted to caffeine
- Poor digestion
- Exposure to toxic chemicals
- Sitting on your ass all day
And all these things relate to each other too. If you are stressed then you are more likely to smoke. If you avoid animal fats then you are more likely to eat processed junk. If you skimp on sleep then you are more likely to have poor digestion. If you become addicted to caffeine it’s a sign that you are not sleeping and relaxing enough.
Do you follow?
There will never be a single nutrient (yea, how about that – we have been lead to believe that a substance that nourishes our body also screws up our body) that causes this or that. Not even one single factor.
Everything is interrelated.
It’s extremely unfortunate that we have been mislead.

10. Commodity chickens have up to 12% added water weight
I was shocked when I learned this from John Wood from US Wellness Meats (affiliate link). Read his quote carefully…
I don’t know how this affects the nutritional profile of the bird. I do know that this adds a significant amount of weight as stated. This means you are paying more money for less meat.
I’m not against making money. We all need it to thrive in today’s modern world. But I definitely think differently about folks who are greedy about their money. This includes the food industry as a whole. The pharmaceutical industry as well.

11. Poop is a huge indicator of how spectacular or poor your digestion is
Digestion is another indicator of your overall health. And poop is an amazing indicator of how brilliantly or poorly you are digesting the food you consume.
Yes, it’s time to talk about poop.
Steven Wright and Jordan Reasoner, bloggers at SCDLifesyle.com, did a phenomenal and hilarious job talking about the role that poop (farts too) plays in finding out the healthfulness of your digestion.
We don’t like to talk about it but that does not mean that we shouldn’t keep an eye on it ourselves. If you want to feel awesome and do the impossible then start looking at your poop.
Take a look at the Bristol stool chart and aim for a type 4.
Consider timing yourself on the toilet too. Do you have time to read? Then you need to do some troubleshooting…
- Eat more fat (you may need to eat less if you have near diarrhea but first avoid grains).
- Squat while you are pooping (this has been HUGE for me).
- Get naked.
- Drink coffee (this helps me but it’s best to not rely on coffee to produce a bowel movement).
- Move more.
- Manage your stress more effectively.
- Feed yourself more nutrient dense foods.
- Eat more fermented foods.
- Drink homemade bone broth.
