Coconut is one of the most versatile foods on the planet. At least some form of it will go with just about anything. I’m a big fan of Thai currys as well as coconut smoothies.
Two recipes below call for coconut water – nature’s richest source of electrolytes. It’s available at most health food stores like Whole Foods. You can also save money per an by buying a 12 pack on Amazon here. Amy & Brians Naturals is my favorite brand.
Coconut oil is used in two of the smoothies. Be sure you add this after blending the rest of the ingredients. The coconut oil must be in liquid form too!

Pumpkin Strawberry Coconut
- 3/4 cup Water
- 3/4 cup Pumpkin, Canned
- 10 small Strawberries, Frozen
- 2 TBSP Coconut Oil, Melted
Add the first 3 ingredients to your blender and blend until smooth. Then add liquid (this is important!) coconut oil and blend again until smooth.
Blueberry Chestnut Coconut
- 1/2 cup Coconut Water
- 4 large Egg Yolks
- 1/4 cup Chestnut Puree
- 1/2 cup Frozen Blueberries
Coconut water is not absolutely essential… but is far superior compared to water for smoothies like this one. It adds flavor and loads of electrolytes. I purchased chestnut puree at World Market. It may be tough to find but if you spot some then buy it! It’s great in smoothies.
Chocolate Cocodamia
- 1/2 cup Coconut Water
- 1 small Banana
- 1/4 cup Macadamias (10-12)
- 1/2 TBSP Cacao Nibs
- Top with Ice
- 2 TBSP Coconut Oil, Melted
Add the first 5 ingredients to your blender and blend until smooth. Then add liquid (this is important) coconut oil and blend again until smooth.
